After the dreadfully long and frigid winter we had, I felt we needed some fresh strawberry freezer jam! I don’t think there is anyone who isn’t jumping for joy that there is sunshine in our lives again! And along with that sunshine, there comes all the fabulous signs of spring like beautiful strawberries! The aroma lures you to them in the grocery store, and the cheaper prices seal the deal: You are going home with some fresh berries, my friend! But once you get them there, do you know what to do with them? Or do they just sit until they ruin? Well not this time! This time, you’re going to try your hand at a very traditional and SIMPLE recipe. This time, you’re making strawberry freezer jam!
If you’re like me, you always thought jam recipes were hard, and required lots of cooking and boiling, funnels and canning. Guess what! I was wrong, and so are you! Strawberry jam is so ridiculously easy, you’ll never understand why you didn’t do this before. It takes about 20 minutes to make, and 30 minutes to set. Then you’re done!
What You’ll Need:
1 2/3 cup mashed strawberries *this is about 1 ½ cartons*
2/3 cup sugar (you can decrease this to 1/2 cup if you want more tartness)
2 TB Instant Pectin
First: Take off the tops of the strawberries, being careful not to leave any pieces of leaves behind as this won’t blend well in your jell. Put the strawberries in a bowl and mash them until only tiny bits of berries remain.
Second: Mix the sugar and pectin together in a bowl.
(This part ^^^ always looks a bit gruesome Haha)
Third: Pour mashed berries with the sugar mixture, and blend until it is dissolved.
**Normally, you’re supposed to stir the mixture for 3-5 minutes, but I’ve done it both ways, and the end result is truly no different. (see photo below) So if you want to stand and stir for a few minutes, that’s completely fine. But if you’re impatient and don’t want to, it won’t hurt it. 🙂

Fourth: Add the jam into mason jars stopping about 1/2 inch – 1 inch from the top of the jar, put the lid on, and leave on the counter for 30 minutes.
After the thirty minutes has passed, put the jam in the freezer for at least 12 hours. After that, just thaw and serve, and store in the fridge.
You are going to be so proud of this strawberry freezer jam, and the best part is that you know what’s in it, so you don’t have to worry about anything artificial or unhealthy!
