I continually say that every woman should have a few classic staple recipes in her arsenal to whip out for certain occasions. The perfect biscuit recipe. The perfect freshly baked bread recipe. And the perfect banana nut muffin recipe. I consider this recipe one that is both impressive and nostalgic. Someday when my children are grown up, they’ll still remember the way the house smelled when I made banana bread, and hopefully it will take them back to a happy place in their mind. These muffins are extra special though – these muffins have a special *SECRET* ingredient! This is the perfect recipe for those mornings you host coffee with your gal-pals, or to take to church for your Sunday School class, or to your Mother-In-Law’s house for Christmas morning. Whatever the occasion, whatever the reason, these Caramel Banana Nut Muffins are honestly simple, perfectly sweet, and incredibly impressive!
What you’ll need:
1 ½ cup all-purpose flour
1 ½ tsp baking powder
¼ tsp baking soda
1/3 tsp cinnamon
1 cup mashed bananas (about 3 medium bananas)
¾ cup sugar
¼ cup cooking oil
½ cup chopped walnuts (or pecans – your preference!)
In a medium mixing bowl, add the flour, baking powder, baking soda, cinnamon, and 1/8 tsp (or a pinch or two if you don’t like measuring) salt. Stir with a fork. (Little hands may have a few spills! Haha)
In another medium mixing bowl, add the banana and the sugar together and mash it up until it is the consistency of pancake batter (or runny pudding). Then add in the egg and the cooking oil and mix well.
Make a well in the middle of the dry mixture and pour in the banana-egg mixture. Stir until just mixed (there will still be lumps!) Then add the nuts, and stir them in.
Wanna know what the secret is???! It’s my Pampered Chef Caramel Sprinkles. I add them to the muffins to make a sweet and crunchy topping. (Lesson learned: Make sure when you give your 3 year old a bowl of sprinkles for the topping that you are CLEAR that it is for *ALL* the muffins, and not just one lucky one…)
*Now, I realize that you can’t get these anymore, so I’ve take the liberty of trying out a few other combinations, and so far, the two things I found that work the best is sugar in the raw and toffee bits. If you mix them together, you’ll get the same perfectly crunchy sweetness as the Pampered Chef sprinkles.*
Bake the muffins at 350 degrees for 18-20 minutes (mine are perfect at exactly 20!) Then take them out and let them rest for a minute…if you can control yourself. If you’re like me, and you can’t…well then dive right on in! I love them with a bit of salted butter…
